Burfi or Barfi it’s a fudge from Pakistani and Indian cuisines, it is a dense milk based sweet and the name is a derivative of the Persian word barf, which means snow.

Ingredients
  1. ¼ cup Butter
  2. ¾ cup Milk
  3. ½ cup Sugar
  4. 2½ cup Milk Powder
  5. 1 tsp cardamom powder / Elaichi powder
  6. 3 tbsp Nuts,chopped (almonds, pistachios..)
Instructions
  1. In a large Pan add the Butter then the Milk, keeping the flame on low add in the Milk Powder.
  2. Followed by the Sugar and Cardamom.
  3. Stir continuously making sure everything is combined well and sugar dissolved, keeping the flame on low and no lumps formed.
  4. Keep stirring on a low flame till milk thickens and forms a dough it takes about 10 mins.
  5. If the dough separates from the pan Your burfi is ready!.
  6. Transfer the Burfi into a dish lined with baking paper, press with your hand or spatula forming a block.
  7. Add the chopped Nuts and press slightly.
  8. Set aside for few minutes until it sets completely.
  9. Once it's chilled take it out of the dish and cut it into Diamond or square pieces.
  10. Serve you Burfi with a nice Pakistani black tea
Notes
  1. DO not over cook it or it turns chewy!!
  2. YOU can store the Burfi in airtight containers for 15 days.
