The Mango Layer
  1. ¼ cup water
  2. 2 ½ tsp of unflavored powder gelatin
  3. 3 to 4 mangoes, 1 cup fresh mango puree approx
The Cream Layer
  1. 2 cups heavy cream
  2. 1 cup milk
  3. 1 tbsp vanilla extract
  4. 2 ½ tsp of unflavored powder gelatin
  5. ⅓ cup sugar
  6. A pinch of salt
Instructions
  1. In a microwave-safe bowl mix the gelatin with water gently until incorporated and set a side for 10 mints.
  2. Meantime, blend the mango flesh until pureed using a blender or food processor.
  3. Place the water and gelatin mixture in the microwave and heat for 1 min then pour it into the mango puree and stir well.
  4. Place your serving glasses in a cupcake tray at an angle and divide evenly between the glasses and refrigerate until set.
  5. For the creamy layer: Pour the milk into a sauce pan, stir in the gelatin and let it sit for 10 mints, after that place it over medium heat, add the sugar and salt, stirring just until sugar and gelatin have dissolved, then turn of your flame. (don't bring it to a boil).
  6. Remove the mixture from the heat and add the heavy cream and whisk in the vanilla extract stir everything together verywell.
  7. Take the serving glasses out of the fridge with the mango layer already set. Then, pour the cream mixture evenly into each glass.
  8. Place back to the refrigerator to chill for the whole night or until set, Enjoy.
